Peran Human Capital dan Kompetensi Chef Hibachi dalam Menciptakan Spectacular Dining Experience

Purpose: The research aims to determine the efforts that hibachi chefs can make to provide a spectacular dining experience.
Methods: The research uses descriptive qualitative methodology, with data collection techniques through interviews with several hibachi chefs who have worked in America, Europe, Indonesia and guests who enjoy food in front of the hibachi table, observations at the Fatcow - Legian restaurant, Dulang - Kuta Restaurant, and participant observation as a hibachi chef (season worker) for 3 months at Grand Victoria Sunny Beach – Bulgaria. In addition, a documentation study was conducted to gather the necessary data from Google reviews, guest comments, and several hibachi-related articles.
Implication: The findings highlight that to succeed as a hibachi chef, cooking ability is not enough. A complementary combination of technical and soft skills is required. Social awareness, in understanding customer characteristics and preferences, is crucial to understanding the food, service, and atmosphere guests prefer. These indicators are an essential part of the dining experience.
